Critic tasting note: "Volare comes from a selection of the calcareous soils in the original vineyard that the Cristo Orante Monastery monks planted in 2008 in Gualtallary, about 1,400 meters above sea level, in northern Uco Valley. It's a lower vineyard planted on flat soils, and winemaker David Bonomi has been using it since 2018 to make the wine for Volare del Camino and for Inseparable, the Per Se project's two base wines. But the difference in soils is important—not at the level of the fruit, but of the textures. The aromas and flavors of the two wines are siblings, but the major difference is in that soil that here offers Volare a tension and edge that lend it verticality and a different kind of energy.
