Critic tasting note: "Le Paradis comes from a section of Catena’s highest vineyard in Gualtallary, at an altitude of 1,550 meters and facing south, which is a cool exposure on this side of the world. The soil is rocky. From the 1.5-hectare pinot vineyard here, this wine is made from the chalkiest zone, corresponding to a third of a hectare. The wine is vinified with 100% whole clusters and then aged in barrels for 15 months. And as is usual for red wines that come from very calcareous soils, at first it presents a very potent reduction that gives it aromas and flavors similar to gunpowder. Little by little those notes disappear in the glass. Besides that, the structure of the wine is sharp and full of acidity, with a strong presence of limestone that impregnates the palate, leaving a very strong chalky sensation.
